Japanese maze-soba chain Menya Kokoro introduces Kumamoto-style Japanese noodles - a healthier alternative to the usual ramen - made from glass noodles which are low in carbohydrates and fat-and gluten-free.

Everything is mixed together and the overall effect is a complex flavour and texture mix that has meat and fish flavours, spiciness, vegetable herb tastes, garlic and is gently creamy because of the soft boiled egg. The good thing is that the flavours are balanced and no flavour over-dominates.

Zenbu Maze-soba, Quite value-for-its money as you get a bit of everything in a bowl, especially when you get two types of pork (minced meat and char shu) and two types of eggs.
The Spicy Maze-Soba ($11.80++) is my favourite bowl, but the spiciness is likely to divide people. Some of us shared this bowl – a couple enjoyed the kick, the shiokness which result in some sweat to break out.
The signature MAZESOBA consists of 12 fresh and healthy ingredients: Japanese-style slow-braised chashu, spicy minced meat sauce, ground saba fish, poached eggs, nori, green onions, chives, bamboo shoots and fragrant chopped garlic. Mix them all together with some of their special vinegar for a delicious burst of flavours!

a meal at Menya Kokoro Tokyo Mazesoba Restaurant can be an interesting experience. Maze-Don and Maze-Soba are presented with all the ingredients nicely arranged on top of the rice or noodles. You get the excitement of mixing the ingredients.
To me, the appeal in the noodles is about the mixture of all toppings and sauces. Even though there are many ingredients and so much going on, when all are mixed together, they create this complex but blended flavour with satisfying mouthfeel.
